Chef leaves Michelin star restaurant


Chef István Pesti will leave the Platán Gourmet Restaurant, in Tata, on July 31, ending the current chapter of Hungary’s only two-Michelin-starred restaurant outside Budapest.
The change affects only Platán Gourmet; the restaurant’s other venues in Tata, including Platán Bistro and Platán Udvarház, will continue operating as usual.
Under Pesti’s leadership, Platán Gourmet became one of Hungary’s most acclaimed dining destinations, earning two Michelin stars.
From August, the restaurant plans to shift to a new format featuring guest chefs, winemakers, and special gastronomic events.
Speaking to Dining Guide, Pesti said the decision followed a long period of reflection.
The departure comes little more than a year after the Costes Group became the restaurant’s majority owner.
According to Costes founder Károly Gerendai, maintaining a two-Michelin-starred restaurant in Tata proved financially challenging.
While the restaurant has attracted strong domestic interest, it lacked the international clientele needed to sustain a fine dining operation of that level.
Platán Gourmet received its second Michelin star in 2023, joining Stand in Budapest as one of only two restaurants in Hungary to hold the distinction.
